(Better Than The Original) Paleo Green Bean Casserole

Staying healthy is not about deprivation or restriction! I personally don’t do well with gluten, dairy, or soy, but there’s no way I’m going without my favorite dishes! So what do I do? I π˜”π˜–π˜‹π˜π˜π˜ .

This recipe is simple and uses whole foods instead of the heavily processed ingredients found in traditional green bean casserole recipes. It’s Paleo/Whole30 friendly, and free of gluten, dairy, corn, eggs, AND soy, for those with sensitivities!

(𝐁𝐞𝐭𝐭𝐞𝐫 π“π‘πšπ§ π“π‘πž 𝐎𝐫𝐒𝐠𝐒𝐧𝐚π₯) π†π«πžπžπ§ 𝐁𝐞𝐚𝐧 π‚πšπ¬π¬πžπ«π¨π₯𝐞

𝐈𝐧𝐠𝐞𝐝𝐒𝐞𝐧𝐭𝐬:

1 lb fresh (destemmed) or frozen green beans (thaw before using frozen or they will release too much liquid)

8 ounce package organic fresh mushrooms (washed and diced)

2 small onions (one diced and the other thinly sliced)

1 cup cashews

2 cups of bone broth (regular broth or veggie broth works too)

4 garlic cloves, finely chopped (adjust to taste)

1 Tablespoon lemon juice

1 teaspoon garlic powder

3-4 Tablespoons nutritional yeast (adjust to taste)

1/4 teaspoon smoked paprika (optional, but adds a nice kick)

2 Tablespoons ghee, olive oil, or avocado oil

Sea salt and black pepper, to taste

πƒπ’π«πžπœπ­π’π¨π§π¬:

Cover cashews in filtered water and allow to soak at least an hour (this helps them blend better later). Dump water and rinse before using.

Add 1 Tablespoon oil/ghee, diced onions, and mushrooms to a large skillet and sautΓ© over medium heat for 3-5 minutes. Add garlic, a little salt and pepper, and reduce heat.

In a high speed blender (Nutribullet or Ninja work great), combine cashews, broth, nutritional yeast, garlic powder, lemon juice, and paprika. Blend until smooth and add salt/pepper to taste. Blend again and adjust seasoning.

Add cashew sauce to the pan with onions/mushrooms and cook over low, stirring occasionally, until thickened. Add more salt/pepper, if needed and remove from heat.

Add green beans to a 9×11 baking dish and cover with cashew/onion/mushroom mixture. Stir gently until combined.

Bake at 350 for 30-40 minutes (depending on how well done you want the green beans).

While the mixture bakes, add the remaining ghee/oil to a pan and sautΓ© the sliced onion until caramelized.

When the casserole is finished baking, top with caramelized onions and serve!
