Healthy Homemade Tacos

When it comes to cooking and meal prep, we’re all about easy, one pan meals. Especially those that taste great as leftovers! This one pan mix makes a great filling for tacos, or topping for a taco salad or burrito bowl! It’s naturally gluten and dairy free, and fits in with Whole30, Paleo, low carb, and keto eating plans.

𝐈𝐧𝐠𝐫𝐞𝐝𝐒𝐞𝐧𝐭𝐬

  • 1 lb grass fed ground beef or bison
  • 2 bell peppers, sliced and deseeded (red, orange, or yellow)
  • 1 bunch green onions, washed and chopped
  • 2 teaspoons garlic powder (omit or swap for asafoetida powder to make recipe low FODMAPS)
  • 2 teaspoons chili powder
  • 2 teaspoons salt
  • 1 tablespoon avocado oil

  • Add the ground beef/bison to a large cast iron pan/skillet over medium heat. If you substitute this with a leaner meat (like chicken or turkey), you’ll want to add a tablespoon of oil to the pan as well.
  • Add the garlic, chili powder, and salt and combine well. Stir as meat mixture cooks over medium heat until browned.
  • Remove meat from pan, add oil and bell peppers (add a little extra salt as these are cooking). After 2-3 minutes, add green onions. Add meat back to pan and stir to combine. Cook an additional 1-2 minutes (green onions cook quickly) and taste. Add additional seasoning, if needed.
  • Place mixture in organic corn or grain free tortillas (such as Siete), add your favorite hot sauce, top with shredded romaine, and enjoy!
  • Optional add ins/toppings: grass fed cheddar, dairy free cheese, avocado, yogurt/sour cream
  • Tortillas may be swapped for lettuce wraps for keto/low carb. Or place the mixture on top of mixed greens for a taco salad or rice + beans to make a burrito bowl!
