- Add the ground beef/bison to a large cast iron pan/skillet over medium heat. If you substitute this with a leaner meat (like chicken or turkey), you’ll want to add a tablespoon of oil to the pan as well.
- Add the garlic, chili powder, and salt and combine well. Stir as meat mixture cooks over medium heat until browned.
- Remove meat from pan, add oil and bell peppers (add a little extra salt as these are cooking). After 2-3 minutes, add green onions. Add meat back to pan and stir to combine. Cook an additional 1-2 minutes (green onions cook quickly) and taste. Add additional seasoning, if needed.
- Place mixture in organic corn or grain free tortillas (such as Siete), add your favorite hot sauce, top with shredded romaine, and enjoy!
- Optional add ins/toppings: grass fed cheddar, dairy free cheese, avocado, yogurt/sour cream
- Tortillas may be swapped for lettuce wraps for keto/low carb. Or place the mixture on top of mixed greens for a taco salad or rice + beans to make a burrito bowl!
