Waldorf Chicken Salad

Is lunch time the hardest time of day for you to make healthy choices? Instead of getting stuck between skipping lunch or greasy take out, pack some healthy leftovers instead! This easy chicken salad is an allergy-friendly take on an old favorite, and you can use leftover chicken or even a store bought rotisserie. This comes together with just a few simple ingredients, in just a few minutes.

Ingredients

  • 3 cups cooked chicken, chopped into small cubes
  • ½ cup seedless red grapes, halved
  • 1 apple, diced
  • 1 cup diced celery
  • ¼- ½ cup plain (unsweetened) coconut, almond, or cashew yogurt
  • ¼ cup Dijon mustard
  • Salt and pepper to taste
  • Optional add ins: chopped walnuts, pecans, pistachios, or unsweetened dried cranberries

Directions

  • Stir together all ingredients and serve as a salad, sandwich, or wrap.
  • Refrigerate leftovers- this salad keep well in the fridge for up to 3 days
